Breakfast Burritos

While in the middle of Manhatten in New York City we found several places serving Breakfast Burritos. Since then we have made them at home using the following outline:

Ingredients
  1. Black beans
  2. Onions
  3. Mushrooms
  4. Green peppers
  5. Two eggs (for two people)
  6. Cheese (preferrably cheddar)
  7. Salsa, sour cream, tobasco sauce are optional
  8. Wraps or tortillas

Steps

  1. Cook beans, onions, mushrooms, and peppers in a pan.
  2. Scramble eggs in another pan. Add cheese.
  3. When both are almost done combine the two if you don't mind it messy style.
  4. Heat the wrap on top of an open flame so part of the bread gets slightly flaky and burny (don't start a fire!).
  5. Either dump the beany egg mess on the tortilla or make neat layers of beans and egg in your burrito.
  6. You can add other things like hot peppers and sauces to taste.
  7. Experiment! Try this several ways to find what is best.
